Jesse Arellano, owner of C&C Coffee and Kitchen, and a graduate of Sierra High School in Colorado Springs, speaks out after reopening his Castle Rock restaurant and violating of the state’s order on Sunday. The Tri-County Health Department ordered the restaurant to close on Monday, and Gov. Jared Polis announced on Monday that the Colorado Department of Public Health would be suspending C&C’s license indefinitely.
