Coloradans can now spice up their rides with Pueblo Chile plates

Chiles are serious business in Pueblo.

Who knew Gov. Jared Polis would get us into a border war six months into his new job? This, however, is a just war — and one our state cannot and should not lose. No less than the honor of the Pueblo Chile is at stake.

It all started a few days ago, when Polis posted a Facebook message praising Whole Foods for stocking Pueblo Chile in its Colorado, Utah, Idaho and Kansas stores. Polis noted, quite correctly, that Pueblo Chile is “the best in the world” and lamented that New Mexico stores still were being stocked with the locally produced, yet vastly inferior, Hatch chile.

New Mexico Gov. Michelle Lujan Grisham replied that “if Pueblo Chile were any good, surely it would have been on national shelves before now. But if Gov. Polis wants to go chile to chile, I assure him New Mexico can bring the heat.”
