Girl Scout cookies transform into featured desserts | NONPROFIT REGISTER

News: Whether you believe in eating dessert first or always saving room for a sweet treat at meal’s end, the Crafted Concept restaurants – Bistro Vendome, Rioja, Stoic & Genuine and Ultreia – have something special for patrons through March 10.

Once again, the pastry wizards at these popular dining establishments have partnered with Girl Scouts of Colorado to incorporate Girl Scout cookies in some specialty desserts. The restaurants will donate $1 from each of the specialty desserts sold to Girl Scouts of Colorado.

Bistro Vendome, 2267 Karney St. in Denver’s Park Hill neighborhood, is featuring Box of Thin Mints, a concoction crafted from chocolate mousse and mint chocolate sauce with a sprinkling of vanilla-Thin Mint crumbs.

Do-si-Do PB&J is on the menu at Rioja, 1431 Larimer Square. It is composed of a Do-si-Do phyllo crisp with grape chiboust (a French pastry cream), roasted grapes and a drizzle of peanut butter anglaise.

The choice at Stoic & Genuine, 1701 Wynkoop St. in Denver’s Union Station, is a salted caramel and chocolate ganache tart built around Adventurefuls.

The Trefoil dulce de leche cheesecake at Ultreia, also in Denver’s Union Station, has a Trefoil crumb crust, vanilla whipped mascarpone and white chocolate anglaise.

“Our pastry chefs unleashed their creative talents and came up with these amazing desserts,” said Beth Gruitch, who owns the Crafted Concept restaurants with James Beard Award-winning chef Jennifer Jasinski. “We are thrilled to be partnering with Girl Scouts of Colorado because we believe in the power of girls to change the world.”

Leanna Clark, chief executive officer of Girl Scouts of Colorado, adds: “We are honored to continue what is now a four-year partnership with four of Denver’s top restaurants. We hope the community will turn out to support our Girl Scouts and enjoy the remarkable desserts the Crafted Concepts chefs have created, using our cookies as inspiration.”
